Banana Walnut & Chocolate Chip

& Chai Muffins

3 large ripe bananas

1 egg

1 teaspoon vanilla

1/3 cup butter, melted

1 ½ cups all-purpose flour

¾ cup granulated sugar

1 teaspoon baking powder

1 teaspoon baking soda

½ to ¾ teaspoon Chai spice (personal preference)

1/8th teaspoon salt

1 cup chopped walnuts

½ cup dark chocolate chips

Topping: chopped walnuts and Chai sugar

Mash bananas with hand mixer. Add egg, vanilla and melted butter to mashed bananas and mix with hand mixer. 

In separate bowl, mix flour, sugar, baking powder, baking soda, salt and Chai spice. Add to wet ingredients and mix by hand just until blended. Add walnuts and chocolate chips. 
Prepare muffin tin by greasing lightly. Divide the batter among the cups (makes 12 muffins). Top with chopped walnuts and Chai sugar.


Bake at 350 degrees for 20 – 24 minutes, until golden brown on top and a toothpick inserted in the middle of muffin comes out clean. 

Let sit 10 minutes before removing from muffin tin to cooling rack. Enjoy!
